Take a look at the new food options for Husker football gamedays

Husker Athletics and its concessionaire Aramark on Tuesday unveiled their new menu for football gamedays at Memorial Stadium. Fans will still see regular options like popcorn, Valentino’s pizza and Runza sandwiches. But new options will range from a “Footlong Ribwich” to an N-shaped pretzel and dessert nachos. The food options will vary between which level fans can access.

Memorial Stadium’s general concession stands will serve the following new food options:

• N-shaped pretzel: Available at all GBR classics
• “Footlong Ribwich:” Boneless riblets coated in maple barbecue sauce and topped with onions and dill pickles on a Rotella hoagie. This will be available in Section 22 at 1923 Cheese Steaks.
• “Boneyard Dry Rubbed Wings:” Chicken wings tossed in the customer’s choice of sweet and smokey BBQ Spice or buffalo spice, served with a side of ranch. This will be available in Section 5 and on Club Levels at Boneyard Wings.
• Fairbury Polish sausage: A smoked Polish sausage served on a Rotella bun. This will be available at most GBR Classic locations.
• For 11 a.m. kickoff games, a breakfast taco offering will be served at all Tunnel Walk Taco locations.

Fans that have access to the club level will have these elevated food options:

• Ribeye sandwich: Hand-cut ribeye steak topped with grilled onions, Gorgonzola cheese and horseradish cream served on a baguette.
• Dessert nachos: Sugar-coated, fried red tortillas topped with macerated strawberries, chocolate syrup and angel food streusel.
• Scotcharros: Chewy peanut butter rice cereal bars topped with a blend of chocolate and butterscotch.
• “Big Red” cookie: A large red velvet cookie with chunks of white and dark chocolate.

Bryan Adams, the executive chef for the Aramark concessionaire at NU, expects the dessert nachos to be a big seller. Adams said the food crew offered a similar item, although it was more of a bananas foster dish, during the Savannah Bananas baseball game this summer that flew off the shelves.

“So we figured this would be a great addition for the Red Sea,” Adams said. “People will love it. These all should be great items to display this year. They should really, really bring Nebraska home.”

This year, with the $600 million Big Red Rebuild construction that was announced and approved in April, the concession food will come from a temporary commercial kitchen on the northeast side of the stadium. The construction that started earlier this year displaced Memorial Stadium’s commissary, so the food preparation area is moving from under the West Bowl to a group of trailers propped up by the company On-Site Solutions.

“They’ve been here, up and active since March, so really, our first test out of the gates this summer was our concerts,” Kortne Gosha, NU’s Chief Commercial Officer. “We’ve been able to actually increase our capacity from a food service perspective.”

The Nebraska football team’s first game is Saturday at 11 a.m. against Ohio.
